POLENTA RECIPE
FOR ALL DAY LONG

Sometimes it happens that something that is good for you actually tastes
good.
Polenta is that: It is simply cornmeal, but fit for a main course at dinner
as well as lesser meals through the day.
The following is a truly simple recipe done in the microwave.
START WITH DINNER:
IN PLASTIC OR GLASS MIXING BOWL
Mix 3/4 cup Polenta with 3 cups water –
Stir, cover, and microwave for 8 minutes.
Remove, stir well,micro uncovered 2 to 3 mins. more.
Use half for 2 dinners, spoon on plates and cover with very thick marinara
sauce.
Spoon other half into 8 x 8 inch pyrex dish, spreading thin. Refrigerate.
BREAKFAST NEXT DAY
Use half from refrigerated pyrex dish to make 4 slices.
Fry in butter or margarine, serve with maple syrup.
LUNCH, TOO
Other 4 slices just fry in butter or margarine to add to
lunch menu.
If you need entire recipe for 6 to 8 dinner guests, simply repeat the
recipe after the first and spread entire second batch thin in glass pyrex
dishes.
